Sweet Potato Blender Muffins
3⁄4 cup baked sweet potato 2 ripe bananas 2 large eggs 1/3 cup almond butter 1 cup whole rolled oats 2-3 TBSP pure maple syrup 1 1⁄2 tsp cinnamon 1⁄2 tsp nutmeg 2 tsp baking powder ***additional add-ins - chocolate chips, nuts, grated carrot*** Instructions: Preheat oven to 350 degrees. Spray or line 12 muffin cups. Place all ingredients, except baking powder, in a blender. Blend until it’s the consistency of batter, scraping down the sides as needed. Stir in baking powder.
